When Food Meets Wine - Chateau Kefraya

We were so happy to visit Chateau Kefraya’s restaurant. The host was superb; you can feel so relaxed as if you’re at home. The food was very enjoyable especially with Chateau Kefraya’s wine. We tasted a variety of their starters, main dishes and desserts. In this article, we will be talking about our experience with the starters.

Marinated Salmon with Kefraya Arak:

This plate was full of emotions with endless sensations. The presentation was very tempting and elegant. As you can see from the pictures, the salmon was presented with two different methods; the marinated salmon and the smoked salmon, both served with bread.

The marinated salmon was prepared with the new Swiss technique, “the Pacojet” - a revolutionary device that elevates ordinary cooking to culinary excellence. Pacotizing enables chefs to ‘micro-puree’ fresh, deep-frozen foods into ultra-light mousses, naturally fresh ice creams and sorbets or aromatic soups, sauces or fillings without thawing.

Intensive flavors, natural colors and vital nutrients are captured in individual, ready-to-serve portions. Adding fennel, salt, sugar and a squeeze of lemon juice gave it a balance texture.

Pacotized Foie Gras:

As for the Foie gras; the popular and well-known delicacy in French cuisine; Its flavor is described as rich, buttery, and delicate. Foie gras is normally eaten at the start of a meal with an aperitif or as a starter. But it can also be added to a salad or it can be used to enhance the flavor of a main dish. The same technique was used for the foie gras, pacotized with fresh cream.

The two methods were extremely delicious, mild and fluffy, served with spicy flavor of lightly toasted gingerbread, wine salt, syrup and fig compote.

Sweet, fruity or semi-sweet Kefraya’s wines make the most marvelous accompaniments for foie gras as they bring out the creamy nature of the liver while leaving the aromas intact.

Healthy Fact: Did you know that both duck and goose foie gras has some surprising nutritional properties. It contains large amounts of mono-unsaturated fatty acids that promote cardio-vascular health. In the same way as olive oil, it reduces levels of bad cholesterol. Moreover it is rich in vitamins B6 and B9 and has very high levels of iron. So, it is ideal for everyone including pregnant women.

Lebanese Mezze in a Basket:

Here comes the famous basket of Chateau Kefraya, a plate were you can choose the Lebanese mezze you want. Tasting was original with the design of the Lebanese bread.
